tuna & fresh vegetable salad

serves 4

ingredients

12 cherry tomatoes, halved

1½ cups whole green beans, cut into 1-inch/2.5-cm pieces

8 oz/225 g zucchini, sliced thinly

3¼ cups thinly sliced white mushrooms

salad greens

12 oz/350 g canned tuna in brine, drained and flaked

fresh parsley, to garnish

for the dressing

4 tbsp mayonnaise

4 tbsp plain yogurt

2 tbsp white wine vinegar

salt and pepper

To make the dressing, put the mayonnaise, yogurt, vinegar, salt, and pepper in a screw-topped jar and shake together until the ingredients are well blended.

Put the tomatoes, beans, zucchini, and mushrooms in a bowl. Pour over the dressing and marinate for about 1 hour.

Arrange the salad leaves on a serving dish. Add the vegetables and then the tuna, and garnish with parsley.
